Malai Kofta Curry

Ingredients

  1. For kofta -
  2. 1 cup paneer (mashed)
  3. 1 cup boiled potato
  4. 1 green chilli finely chopped
  5. few coriander leaves chopped
  6. salt as per taste
  7. 1/4 tsp red chilli powder
  8. 1/2 tsp coriander powder
  9. 1/8 tsp garam masala powder
  10. 2 tbsp cornflour
  11. few cashews and raisins
  12. oil for frying
  13. For gravy -
  14. 2 tbsp oil
  15. 2 tbsp butter
  16. 1/2 tsp cumin seeds
  17. 1 bay leaf
  18. 2 green cardamom
  19. 2-3 cloves
  20. 3-4 black pepper corn
  21. 1 medium sized onion
  22. 7-8 garlic cloves
  23. 1/2 inch ginger
  24. 1 green chilli
  25. 2 tomatoes
  26. 5-7 cashews
  27. 1 tsp kasuri methi
  28. 2 tbsp fresh malai / cream
  29. 1/4 tsp turmeric powder
  30. 1/2 tsp kashmiri red chilli powder
  31. 1 tsp coriander powder
  32. to taste salt
  33. some fresh coriander

Steps

  1. First in a mixing bowl add grated / mashed paneer, boiled mashed potatoes, fresh coriander, green chilli, salt, red chilli powder, garam masala powder and mix everything to combine well. (add tbsp corn flour or maida if required, I didn't add).

  2. Now take a small portion from mixture, roll it and flatten it on palm, place cashew or raisins in it and roll gently to make small ball.make all kofta balls similarly.

  3. Now roll each ball with little corn flour and deep fry in medium hot oil until nice golden.

  4. Now heat a pan with tbsp of oil, add all whole spices and saute for few secs. now add roughly chopped onion, tomatoes, green chilli, ginger garlic and cashews. cook until tomatoes gets softens.add little water if required. let the mixture cool completely and then blend to make puree.

  5. Now in a pan heat oil + butter,add blended puree and cook until oil separates.now add turmeric powder, kashmiri red chilli powder, coriander powder and salt.saute for a min.add kasuri methi, and mix.

  6. Now add fresh malai or cream and stir continuously until oil comes on surface.add as required water to get desired consistency of curry, cover it and cook until the mixture starts to thicken and oil separates from sides.

  7. Finally, in a serving plate pour the curry over kofta, garnish with coriander and cream, malai kofta is ready to enjoy.
